Erin Sheldon

Trainer and Assessor

Erin Sheldon is a highly skilled and experienced VET Trainer and Assessor, with a background in the culinary arts. Erin spent 25 years working as a chef, during which time she gained extensive experience in managing commercial and production kitchens. In her most recent role as the Food Safety and Quality (HACCP) Manager at the Centre of National Resilience kitchen in Howard Springs, Erin demonstrated her exceptional leadership skills and ability to manage complex operations.


In her role as Food Safety and Quality (HACCP) Manager, Erin was responsible for reviewing all Critical Control Points (CCP) monitoring and verification records to ensure compliance with HACCP critical limits. She also monitored and reviewed standard operating procedures (SOPs) and company processes to ensure effective, efficient and safe implementation. Erin led a team of 60 and oversaw the production of 3000 meals per day, 7 days a week. She was also responsible for following up on incident reports and monitoring safety and maintenance issues. In addition, Erin assisted in day-to-day kitchen operations, including rostering, stock management, ordering, invoicing and production.


Erin's exceptional leadership skills were also evident in her ability to mentor, train and recruit new team members. She managed complex dietary requirements, food intolerances, food allergies and custom meals under extreme time constraints. Erin was designated as a Fire Warden and First Aid officer, and maintained high product standards through continual recipe development.


Erin’s experience in managing commercial and production kitchens, as well as her leadership skills, make her an invaluable asset to the training team.
